Fennel Brussels sprouts & apple salad
Fresh & crunchy this salad will accompany any protein dish.
Brussel sprouts are a member of the cruciferous family and will boost healthy detoxification in the liver helping to balance hormones.
Ingredients
1 small fennel bulb tops trimmed
6 large Brussels sprouts
½ red apple
¼ cup toasted almonds roughly chopped
Dressing
2 tblspns extra virgin olive oil
1 tblspn apple cider vinegar
1 heaped teaspoon grainy French mustard
Directions:
Using a mandolin finely slice the fennel, Brussel sprouts and apple
Combine in a salad bowl
Whisk the dressing ingredients together
Pour over dressing and mix together well
Serving Suggestion
Serve sprinkled with chopped almonds and your choice of protein
