Rare beef feta & sweet potato salad


Healthy weight for life.  Add this salad to your collection of meals to keep you satisfied and on track to achieve your goals.

Packed with a range of nutrients, high fibre to fill you up with a satisfying balance of protein, smart carbs and healthy fats.   Loaded with prebiotics and topped with probiotic rich sauerkraut your gut bacteria will love you too.

Serves 1-2


2 cups mixed leaves

½ carrot julienned

¼ red capsicum julienned

¼ Spanish onion pickled

1 stalk celery sliced

¼ corn cob niblets removed

3 sweet potato wedges roasted with skin on

2 slices rare roast beef

3 cm cube of feta diced

1 tspn red cabbage sauerkraut (or any other type you like)

½ sea seasonings

Himalayan salt & cracked pepper to taste

1 tblspn Extra virgin olive oil (EVOO)

½ tblspn apple cider vinegar (ACV)


Rinse and spin salad leaves and arrange on plate

Scatter the other vegetables over

Chop the sweet potato wedges into bite size pieces and add

Likewise the beef slice into bite size strips and toss over with feta

Top with sauerkraut

Mix EVOO and ACV together in a jar with salt pepper & sea seasonings.

Drizzle over salad toss and enjoy/
