Low histamine zucchini corn & sweet potato fritters                    

If you experience annoying chronic symptoms like headaches, pms, cramps, fatigue, hayfever, loose bowels or skin issues you may have a histamine intolerance.  These fritters are great to include in an elimination diet.

Low histamine zucchini corn & sweet potato fritters     

(protein boosted, gluten grain dairy & egg free)

Makes 10-12 frtitters

Ingredients

1 sweet potato boiled and mashed  (approx. 1 cup)

1 small zucchini grated

1 cob corn – niblets cut off cob

1 radish grated

½ cup celery leaf chopped

1 tblspn chopped chives

1 tblspn chia seeds

2 tblspns hemp seeds

1 tblspn sesame seeds

2 coriander plants chopped including the root

1 tspn thyme 1 tblspn extra virgin olive oil (EVOO)

Good grinding of Himalayan salt (approx ½ tspn salt)

Method

Preheat oven to 180oC

Use a coarse grater for the vegetables mentioned.

In a bowl add all the ingredients and mix well together.

Line a baking dish with baking paper

Using a dessertspoon scoop out a portion of the mixture and mould into a pattie shape about 7cm (3”) in diameter.

Place on baking tray and bake in oven for 30-45mins.

Serving suggestions

Serve on bed of mixed salad leaves and watercress drizzled with flaxseed or EVOO and ground salt.  If dairy tolerant delicious topped with some fresh low histamine goats curd.
