Shaved Brussels Sprouts salad
8 Brussels sprouts
¼ cup grated parmesan chees
100mls extra virgin olive oil (EVOO)
2 tblspns lemon juice
Himalayan salt & freshly ground pepper
With a mandolin carefully shave the sprouts in thin slices from top down to stem
Top and tail eschallots and slice into thin slices, both white and green parts
Slice radish thinly and then into match sticks
Mix all the dry vegetables together in a bowl
Chop walnuts roughly and add to bowl
Sprinkle over parmesan cheese
In a jar combine EVOO, lemon juice, salt & pepper
Screw on lid and shake dressing ingredients together well to combine
Pour over dressing and toss again to coat.
Vegan option – Replace parmesan cheese with nutritional yeast.
